Liberated from the back of cupboard, Sherry hasn’t just shed its dowdy image, it’s now positively fashionable with a growing army of fans across all age groups. Aficionada, Pippa Hayward will explain how the different styles of dry Sherry – Manzanilla, Fino, Amontilado, Oloroso, Palo Cortado – are made and talk about some of the great pinchos/tapas that are traditionally served alongside them.

Serve all the wines lightly chilled and don’t worry about having wine left over. Just put the corks back in the bottles and return them to the fridge. The Fino will stay fresh for up to a week and the Palo Cortado and Aged Manzanilla will be fine until the end of November.
Food Suggestions: If you don’t have a local Spanish deli, just try M&S, Sainsbury’s or Waitrose.
With the Fino – salted roast almonds, Spanish olives, marinated anchovies, baby tomatoes.
With the Palo Cortado – aged Manchego, Jamon Iberico, Chorizo.
